People live by trust rather than knowledge. They will assert certain things as facts, than when pressed admit that they heard it from Mom. As a result, people are very susceptible to misinformation, and for some reason, food is the fever swamp of folk wisdom.
I have explained, no less than three times on this forum, why eating hotdogs which are high in nitrides, is no different than eating broccoli which is high in nitrides. I would bet a substantial sum that I will yet have more opportunities to address that subject in the future.
Unless you eat something in its natural state (i.e. an apple), you are eating processed food. Cooking is processing and yes, cooking induces chemical changes in food that will in fact destroy some of the nutrients found in the raw product. The other side of that coin is that cooking makes other nutrients more available than with uncooked food. It is widely accepted by evolutionary biologists, that processing by cooking, allowed human beings to redirect biological resources from digestion to brain development, which seems like a very good argument for eating ‘processed’ food.
